Merrys White Chocolate Liqueur Mousse
•7 oz plain chocolate, broken into pieces
•3 tbsp water
•1/2 tsp finely grated orange rind
•1 oz unsalted butter
•4 egg yolks
•2 tbsp Merrys White Chocolate
•4 egg whites, stiffly beaten
•6fl oz double or whipping cream
•1 tbsp vanilla sugar
•1 x 6 pk of chocolate cups or ramkin dishes
To make the mousse, stir the chocolate pieces with water and orange rind in a saucepan over a low heat. Continue stirring until the chocolate melts and forms a smooth paste. Remove from the heat, stir in the butter, then the egg yolks, 1 at a time, and continue stirring until the mixture is smooth an glossy.
Stir in the Merry’s White Chocolate.
